Does this happen when you're sitting still or while you're driving.

Have you had any coolant leaks in the past month or so, if you had a coolant leak, there might still be some air pockets in the coolant system.

The heat cuts off when I stop. While driving the temp keeps jumping from 180ish to 205-210

or you may not have any coolant in the system, which would have me lookin for leaks.

Ok. I waited for it to stop raining and I checked the radiator. When I went to release the pressure (it was still a little warm) I heard a gurgling noise. It was very low on coolant, and almost none in the overflow bottle.

I know I have a leak somewhere now because I filled it 3 days ago. I put more in just now, also.

Quick question: The bleeder screw on top of the t-stat, is it possible to have it too tight or too loose?

I know for sure you can't have it too tight, I had mine too tight while back and broke it and had to take it to the shop to replace, so don't tighten it too hard.

Far as too loose, long as coolant don't come out then its not loose. Just keep tighten it until you fell like youre forcing it then stop, thats what I do.
