I was wondering what the hp differences are between the GT, GTP and SE.

Also, what kind of body differences are there? It's kinda hard for a noob like me to tell them apart sometimes without looking at the badges.

gt and gtp look the same except for badging. the SE's dont have the same skirting on the sides and I think they also stand a bit taller, but I'm not really sure about the height part.

SE 175 hp
GT 200 hp
GTP 240 hp

and everything else brown said and also the SE doesn't have the dual outlet bumper like the GT and the GTP for the exhaust.

The older SEs had the "catfish" front end. Iirc from 00 on the SE has the same front end. The GT and GTP have a two tone front end while the SE is monotone.

the rear bumper doesnt have the lower two tone exhaust cut outs and it runs one muffler

The WHP (or BHP if you prefer) is 153 w/223lb/ft torque on the 2000 GT. The only mod is a K&N air filter, not the CAI or FWI. Just a filter in the stock cleaner box.

Why would the SE have 25 less HP than the GT? Would that be due to only 1 muff, or would that really have a big impact?

Some SEs came with the L36. But most are the 3.1L
